PATUDI


Ingredients
1 cup gram flour (besan)
3 cup buttermilk
pinch of turmeric
salt to taste
1tsp oil and 1tsp sugar
For tadka
1 tsp mustard seeds
3 tsp oil
pinch of asafetida
1 finely chopped green chilly
half a teaspoon red chilly powder
1 tsp sesame seeds
Method
Mix buttermilk and flour in a bowl. Add turmeric powder, sugar and oil. Mix well. Microwave it for five minutes .Take it out and mix well. Again microwave it for three to four minutes.
Take it out and mix well. Spread evenly on plastic sheet or greased thali.Let it cool for five minutes. Cut in to two inches wide stripes. Roll each stripe carefully. Place them in serving dish.
Now heat oil in small pan. When oil is heated. Add mustard seeds, asafetida, green chilly, sesame seeds and chilly powder. Immediately pour over rolls. Garnish with cilantro and grated coconut.

handvo

ingredients
handvo flour 2cups
curd1cup
grated doodhi 300gms
half cup finely chopped coriander leaves
2tbs sugar
2tsp ginger chilly paste
half tsp soda bi carb
dhania jeera powder 2 tsp
red chilly pwd 1tsp
seseme seeds3tsp
half tsp turmeric pwd
method
in a bowl mix flour,curd and water.mix well and keep aside for 6 to 7 hours to ferment.now add turmeric,chilly,salt ,sugar,dhania jeera pwd,grated dhoodhi,coriander leaves,ginger chilly past,soda.mix well.
take 2tbs oil in a pan.heat it.add 2tsp musturd seeds,pinch of hing and seseme seeds.when it spluter mix half the mixture in to above mixture and pour half into baking dish.pour the mixture in to baking dish.place it in a pre heated oven for 30mnts at 200degree.
chek by inserting a skewer,which come out at clean.

kharising(roasted pea nuts)

soak peanuts(1cup)in salty water for 5 to 6 hours.drain it.srinkle some salt on it.microwave it for 2mnts.mix it well.again microwave it for 2mnts. almost it will be ready.enjoy it with drinks.

sabut moong
heat 1tbs of ghee or oil.saute finely chopped onion. add ginger garlic paste.add green chilly paste.now add two finely chopped tomatoes.stir well.when oil seprates add turmaric pwd , red chilly pwd,dhania jeerapwd.add sabut moong about 1cup.add requaired quantity of water.stir well.add salt n garam masala.pressure cook it in cooker.when it done add some malai or cream.serve with paratha or rice.

methi sakkarpara

Take about two cups of wheat flour. Add finely chopped methi (fenugreek leaves), salt, chilli powder, turmeric powder, ajwain and little of sugar. Also add a table spoon of oil it. Prepare a tight dough adding required amount of water. Roll out chapatis from the dough. Cut the chapatis into long strips and then into the shape of diamonds. Now heat the oil and fry the diamonds till they are golden. Methi sakkarpara are ready.

Papdi no lot in 2 mins

Boil one and half cup of water and add salt to taste, pinch of ajwain , a pinch of cumin seeds and a pinch of soda (papadio khar). You can also also add green chilli paste to it. After this ,when the water has boiled turn off the gas and add about a cup full of rice flour. Mix well. Put the mixture in the microwave for 2 mins on high power.

When you will take out your bowl the papdi lot is ready to eat. Serve it with oil and pickle masala.
